Well you can... If Oxygen is a concern check out our yeast harvesters with Exhaust ports, you can exhaust O2 through the port and not into the fermentation vessel. Cheers Jay

Can you fill the jar with water to eliminate the introduction of oxygen back into the mash

I've got the Catalyst fermenter from Craft a Brew and they have a built-in canning jar attachment at the bottom for exactly this reason. I think it's a great, flexible and cheap design for a great many things. If I had a triclamp conical, I'd absolutely get one of these and convert it. Nicely done! One question: Any idea what PSI rating a typical canning jar can hold?

With a standard band, which is the weakest link in the system, some about 5 some 10, there is really no way to know. We do sell a stainless band that will hold quite a bit more than the stock band. Ours were developed with an added thread to catch that second rib on the jar and being stainless they wont rust.
