Hi! It depends on your wok size and curvature. After trying some of our woks here (between 16" to 18" woks) its roughly 4-6cm The flame is very high, so flame will definitely hit the wok and lick up the sides. Thanks!

Hi! Any non-combustible surface is suitable - Stainless Steel bench would be suitable. The unit is quite heavy so it shouldn't move when you are using it. Thank you

There's no point cooking in a wok as long as you cook without the tossing technique to achieve wok-hei. The results you're achieving in this video could easily be achieved in an ordinary frying pan on a standard kitchen cooktop as well.
