One of my friends mums owned a cloths shop in the small town we live in. One day there was a truck coming to deliver more clothes when it crashed head on with another truck. The fuel tanks exploded. They can stop alright, just not very quickly. Especially given that they are travelling at 80-90 km/h (on the open road) & are about as long as an Olympic-sized swimming pool. Fortunately, most road-train drivers are usually very highly-skilled & safety-conscious operators (like the gentleman in the last clip), who know the vehicle's limits & keep to the road rules.
