Can't beat steam - at least they survive just in a few countries, however Britain leads the way with preserved steam locos

The Green 4-6-0 ten wheeler at the beginning looks like a baby version of a Pennsylvania Railway Class G5s

Good question! To water the passenger cars. Not that they are needed much these days - used by the Indian Pacific during its turnaround for an example. It is not required usually for most trains these days as it occurs at the depot.

Am I correctly assuming that the two pipes atop the Beyer Garrett's forward water tank are vent pipes for the tank?

How does it go around curves? Is it one long rigid frame?

Quite easily actually. Think if it as two sets of locomotive wheels, each with a tender portion rigidly attached. The main locomotive boiler & cab section on a separate frame is pivoted on the tender portions. So it curves in thirds.
