great video, we also eat this salad traditionally on christmas and of course on other days of the year ;) I do it a little differently, I always cook the potatoes as whole potatoes and instead of mayonnaise I usually use creme fraiche (and some sour cream). I refine my salad with 1-2 tablespoons of mustard seeds, some chervil, paprika powder and a little cayenne pepper. Sometimes I also add a hard-boiled egg (cut into small pieces). Soaking them in vinegar helps maintain the shape.
