nice colorful healthy Kitfo for sure... quick question. is this vegetarian friendly version kitfo with regular niter kibbeh???? it is best to substitute kibbeh with Olive oil to make vegan version of gomen kitfo???? I know Niter Kibbeh is used mostly for protein dishes like tibbs, Wats stew like Doro Wat, Kiay Wat, Siga Wat and Minchet Abish etc and also Bozena Shiro with Beef... 🤔🤔🤔🤔

Hi cris, so most of the time we substitute meat with mushrooms in any of the dishes you mentioned. As long as you make sure you add the exact spices used in the dish and you prepared the olive oil the same way we make niter kibe it tastes pretty much the same. To prepare the olive oil you don’t have to leave it on stove that long bc it’s not good for health but just add kibe spices to olive oil before adding it to the collar green. The spices are Ethiopian cardamom, white cumin, black cumin and “koseret” to your olive oil generally and filter the oil after it cool down. I hope it was a good input let me know if I should explain further.
