AUTHENTIC IGBOMINA EKURU RECIPE

Ekuru is a beans dish peculiar to the igbomina people, a subgroup of the Yoruba ethnic group, which originates from the north central and southwest Nigeria.
Ekuru is NOT white moimoi. They are structurally very different. Where you want moimoi to be moist and fluffy, you want ekuru to be porous.
Well made ekuru crumbles easily when broken into.
