At minute marker 3:50, you used the sour liquid (mild acid) leftover from making millet pap. I wonder if I could use vinegar, lemon juice, or Rhubarb. My favorite would be rhubarb I think. I have never made millet pap before.

You really tried, but you did not allow it to stay long enough on the fire after curdling it , it has to be well cooked before parking it for draining.

Hi. Mama says they used ground fresh peppers and ginger with onions and salt. Tamarind powder can also be used to curdle the soyabean milk.

Hi. The 'millet water' is actually a by-product from making the local 'kamu' beverage (a bit like custard). You can also use lemon or lime juice to cause the boiled soy milk to curdle. The 'kamu' in this case was made using ground millet mixed with ginger and cloves then soaked in water for some hours before being seived and the liquid allowed to settle. The resulting lighter liquid on top of the settled, seived mixture is what is then scooped and used for the tofu. You can use any mixture of spices you like. Pepper, salt and Maggi seasoning cubes were used.

hi put the block in a container and cover it with water. leave in the fridge and change the water once a day. should keep well for atleast 4 days

It's made from already grounded and sieved millet (making pap). After the pap is sieved, it's allowed to settle leaving the water on top. So the water was kept and used the following day to make this.

In the United States, the soyabean liquid is known as "soy milk". The soy milk is sold in super markets and grocery stores. The veagans drink soy milk instead of milk from cows. I worry that the only way to get milk from a cow is to make a female cow pregnant. Then there are too many baby cows and we must make the baby cows into veal or hamburgers. I like soy milk better than cows milk so that workers spend fewer hours using their hands to pull the intestines from the animals. If I want to eat meat I should pull the guts out if the animal myself. It is dirty work and I would prefer other people not to get blood on their hands for me. I wonder if you can make milk with grains other than soy beans. Maybe ee could use amaranto (Palmer's pigweed amranthe) or a different variety of amaranthe. Maybe black eyed peas or frijole que resemblen ojo de cabra (eye of the goat beans). I live in the city if Denver, Colorado in America.

this is krazy! how about you get mozzarella cheese, cook in hot water for ten mins...release water and voila = wara! soybeans has almost 830 calories per cup while mozzarella has 113 cals per cup...mozzarella, considered one of the healthier cheeses, contains 85 calories and 6.3 grams of fat per ounce. but soybeans????? don't get me wrong, its a good source of protein and hair growth but still I'll stick to my mozzarella....
