Nihari Ingredients:
Broth / yakhni :
-500 g bones
- 2,liters water
- 4-5 bay leaves
- 1 tbsp fennel seeds
- 1 tsp coriander seeds
Nihari :
-1 cup oil
-1 medium sized chopped onion
-2 tbsp garlic paste
-1 kg Mutton/ Beef
-1/2 tbsp red chili powder
-1/2 tbsp paprika powder
-Salt to taste
-1/2,tsp turmeric powder
-Sounth / dry ginger powder 1 tbsp
-Sounf / fennel powder 1.5 tbsp
-Zeera /Cumin powder 1.5 teaspoons.
-1/2 tsp Javitri (Mace ) Jaiphal (Nutmeg )
Powder
-Long Pepper ( Pipli) Two Pieces
-Cinnamon Two Sticks,
-Star Anise One,
- 5-6Green Cardamom
-2 Big Cardamom
-4-5 Cloves
- 1 tsp cumin
- 1 tsp black pepper peppercorns
- 1 tbsp coriander seeds
- 2-3 bay leaves
Flour slurry:
-1/2 Wheat flour
-1.5 -2 cups water
-Ginger
-green chilies
-lemon
