Family used to raise beef, owned several myself when younger. I really miss having that fresh beef you've raised yourself knowing exactly what went into them. Beef Stroganoff was always a favourite of mine out of all the wonderful dishes my Mum cooked for the family while we were growing up, I would always request it when asked what I wanted for a birthday dinner or other special occasion. I still make her version of it from time to time, this one also looks very good!

Nice recipe. I think the only modification I’d do is to sweat the onions before the wine vinegar to take the bite out and develop the natural sugars a bit.

That’s about the recipe I use for my stew but I add about 1/8 teaspoon of Allspice. Got that from an old Betty Crocker recipe and it really adds flavor.

I can say one thing for sure, this kind of chuck beef will have the consistency of car-tyre after 1h of simmering. For the intrafiber connectictive tissue to dissolve and gelatinize, you will have to simer it at least 2h, maybe 3h. (unless it's Wagyu or some very fatty US cow, but most central european beef is lean as my shoe sole)

I only use chuck. I find it to b the most tender n delicious. You can't. Cook it on raging hot fire. Where are you from? You probably eat horse there?

adding green beans,cabbage and young corn could make it more appealing for the taste, I like the flavor of meat on veggies and the crunchiness are just too good.

Sophie are you Swedish? You remind me of my mom and she was Swedish (her father was born in Orebro in 1875). She was a beautiful kind woman and loved to cook and bake! She passed in 1984 and I miss her dearly! Tom KC3QAC
