Fall means Autumn Olives/Berries. These invasive bushes produce very yummy berries that each bush has it's own distinctive flavor. I show you how to quickly identify this bush and it's berries, and show you comparisons of honeysuckle. These are easy to find and collect.
I then will demonstrate washing techniques and prepping the berries for jam making. The food mill works the best to remove the seeds, I tried the blender method and it doesn't work as well, some shredded seeds get through.
For the jam, I used the simple berry jam recipe on the Ball Pectin Powder label. For this recipe, 8 cups of berries simmered down after processing in the food mill to about 3.5 cups of juice/pulp. I added .5 cups of water to make it an even 4 cups. In doing so, I multiplied the recipe as stated on the label. It called for 9 tsp of lemon juice, 4.5 Tbsp of Pectin, and 3.5 -4 cups of sugar. I added the lemon juice prior to boiling, once it began rolling boiling I added the pectin. When it returned to a rolling boil I added the sugar and continued stirring for one minute.
Once it was finished, I simply hot packed the half pint jars to 1/4" headspace and water bath processed for 10-15 minutes. This produced 5 jars of jam.
I hope you get out with your family and try these berries. Even if you don't make jam, they are great just eating a few as you go. Other recipes for fruit roll ups, smoothies, etc. are out there for the making.
