Guys ❤ I know rhubarb leaves are toxic, that’s why I didn’t give them to the chickens if you look closely they just had the stalks, leaves go in the compost heap 👨‍🌾

To be fair, my free range chickens entirely demolished a rhubarb plant (leaves and all) that was already on the new property we moved too lol. Maybe I have super-chickens, but not a one of them got sick. 😁

I must say everything you made looked delicious. I really liked how you sliced the green beans for the Greek dish that you made. The way you layered the top with the squash, potatoes and tomatoes was similar to a Confit Byaldi (ratatouille) and it looked delightful. The inside of your beets looked stunning when sliced and the borscht looked very tasty. Your kimchi breakfast latkes seem like and interesting combination that I would like to try. I really enjoyed you using your own produce to make a full days meals, even down to tea and calm scenery. Your chickens look very healthy and happy and they love you, you can tell by how they interact with you. They look forward to your presence around them, that means you try to keep good energy. Your land is also very fertile and you can tell from all the butterflies 🦋 and bees 🐝 that were flying around (flying things lol). Thank you for your wonderful uplifting videos, the content and quality of the filmography is amazing. Oh and, Happy Leo Season! Hopefully you’re having a great born month.

Oops. Plan that very well. I follow a gardener in California who did that. He said he lost muscle mass and was feeling fairly low through that month. He also said it affected him negatively for a long time afterwards. Now he's not a chef and I know you would do it better, but since it seems to mean a lot to you that you feel strong and fit, just plan it really well. (Also a couple in Alaska. They did better as they have fish and eggs of their own and a lot of onions, potatoes and preserves, but it still was hard. That was obvious.)

Yeah, 1 day is too easy, I sometimes rely on the garden for a day's food and I've only got a couple of raised beds and a few pots. I hope you've got plenty of legumes and sprouts available for your 1-month experiment, otherwise, lack of protein might be an issue. Unless you're including eggs from your chickens I guess.

Yay, as a Ukrainian - i'm so happy to see you cook borsch. it's definitely one of the most heartwarming meals, especially on colder days: beetroots, potatoes, carrots, cabbage and beans - it doesn't get any more beautiful than this. you really should try it cooking in a traditional Ukrainian way, serving with some (vegan) sour cream and a slice of bread with garlic. it's a match made in heaven 😌

BTW Gaz, if you lightly boil for around 20 mins the beetroot leaves and dress them w olive oil, garlic, and lemon, they're amazing! We eat them like that in Greece.

We Armenians do the same in a slightly different way: we dress them with oil and plain yogurt with some garlic:) It's really delicious and very healthy!

It’s borsch 😊 if u add beans to add for extra protein it makes a perfect vegan version. Also make sure to add cabbage, cut the potato in cubes and serve with sour cream and garlic bread and it’s pure heeeeeeaaaaaaven

I'm from Ukraine, borscht is a national dish in my country and I used to eat it often in my childhood. Your borscht is a bit different from what we cook, but it also looks very tasty

Wonderful video as always Gaz! I am Ukrainian, the beet soup is called ‘Borscht’. I love to add fresh peas and homemade fresh tomato sauce, it is a wonderful soup, either hot or cold. Along with a fresh piece of warm homemade sourdough, a comfort meal in a bowl. Enjoy with different variations, you have a great garden!

As the wife of an Eastern European, I've learned a lot about their cooking. And a major lesson I've learned is you can't just "put some dill" in your borscht, you gotta PUT SOME DILL IN THERE. That applies to any application of dill in any Eastern European dish 😅

Greek girl here! I add in zucchini to the fasolakia as welll :) adds a nice softness! My Yiayia adds in potatoes. 😊I love this dish cuz any veggie goes great in it! If you shred the green beans it elevates the whole dish!!

Gaz! Thanks for the rhubarb juice tip 🙏 I have been trying to manage without foreign veg& fruit lately and replacing lemons with rhubarb is 👌superb. I also thought of quince fruit but it's much harder to just press the juice out of them by hand 😅

What a creative, colorful and inspiring video. Congratulations, you did it, Gaz! BTW: My Eastern European Jewish immigrant grandmother made borscht for us from her own childhood. There was a meat version for winter, and a summer version served cold. I've simplified and adjusted the recipe and my family loves it! Your version looks great too. . .

I saw your post on Instagram about the chickens and you being vegan. People must not realize that they are just mini composters. You waste nothing because they eat everything and you can fertilize with the poop. Plus they can be quite entertaining. It's a win all the way around :)

Hi, Gaz! Great video). I loved your Borsh version (it's pronounced Borsh). Traditionally it's cooked with the meat, but for the vegetarian version we use red beans instead. There is also a cold version of Borsh (great for those hot summer days) and green Borsh - with spinach and sorrel. Check out Okroshka - its a cold "soup" - basically just a bunch of veggies with kvass (its a fermented drink made from rye bread), or you can use kombucha to sub it)

Gaz I've been following you for years and the progress of this channel is spectacular.As a Greek, I love beans, stuffed vegies (stuffed tomatoes, zucchini, eggplants, etc.), chickpea soup or cheackpeas in the oven, lentil soup or salads, fava beans, but also the tasty versions of pasticcio, but instead of meat you make it with carrot, the vegan moussaka, with mushrooms. I also think you would love yalanji dolmades. Keep up the good work. Greetings from Greece.

well done Gaz! As s Ukrainian I'd say you've created amazing BORSH inspired beetroot soup. Borsh usually has cabbage and beans in it. Your version looks more like HOLODNYK - cold beetroot soup, with combucha as a base!

Looks yummy! Agree with the other comments that you seem so much happier than you were in 'the city.' Country life agrees with you! Don't complain about your weather, it could always be WORSE! Now you need to expand your garden to make more produce! Also like the direction you are taking with using local wild plants and herbs, like the Yarrow you were talking to Charles about using as a 'steptic.' I use plantain for bleeding and cuts, didn't know about Yarrow. Cheers!

Your homemade kimchi gave me an idea- what if you visited south korea to learn all about the way we preserve and ferment our food? Just the way you are master at cooking vegetables, we are too. Amazing as always..you don't disappoint....another good option to replace a lemoney flavor you can also use sorel ( not sure if i spelled that correctly) it's a wild plant that the leaves have a lomon flavor not sure how it would work for your application though

Nasrurtiums also have many medicinal & healing properties. Worth keeping one plant indoors over winter ;) like in a utility room or downstairs bathroom.

Ваши видео вдохновляют и поднимают настроение. У меня тоже свой огород и я стараюсь выращивать много разных овощей. Раньше я ела мясо но когда стала есть больше овощей то и мяса больше вообще не хочется. Чувствую себя чище. Я ценю ваш труд и жду следующего путешествия по миру овощей. Спасибо😊
