I love what they did with Azula as well cause technically it doesn't go against the source material and the actress plays her almost perfectly you can tell she's a more realistic version of a 14 year old Azula she has the same look in her eyes and that wicked smile she even mimicked her voice a little

I don't think it's super risky for Aang to be flying with the Mechanist's son because the people in Omashu are used to seeing the boy fly, so they wouldn't jump to the conclusion that Aang is an airbender, they would just think it was another flying machine that had been invented.

This addition at the intro was so necessary. The ending of ATLA is fine for a cartoon, but irl there's absolutely no way after generations of genocide the other nations would all just welcome the fire nation, hold hands and sing Kumbaya. Now though it makes way more sense, that many citizens also feel oppressed and like they're being sacrificed for the firelords unending war, so in a way the "peasants" are also victims.

I really like how they intertwined several standalone characters and stories rather than abandon them. It adds more depth having the mechanist and Jet connected to Omashu rather than random locations. Since they aren't doing books I suspect some of the missing parts like the earthbender prisoners will show up in Season 2, likely integrated with the introduction of Toph.
