The butter thing. It's not even about whether it's unhealthy... It's way too much for a pot of risotto. It's like adding in 5 tablespoons of salt to marinate a chicken wing.

since you're using a lot of mushrooms for the risotto you should use truffle oil it will taste so much better

As a chef, I must say that her methods were of a replica to cooking a risotto. Even the rice was not of correct standards but because Wendy's methods were so innovative, she managed to cook *only* a risotto replica.
