Yep, they need lots of work, and chocolate is very tricky to work with cos they are so sensitive to heat. Too much heat and you'll over-temper or burn it, too little and you won't temper it at all (and all these happen within just a few degrees Celcius temperature difference). Plus accidentally dropping just a tiny amount of water in the chocolate will cause it to seize and get lumpy. That's why real chocolate is expensive. Fake chocolate or compound chocolate is cheaper, they just don't taste as satisfying. Sorry for all the rant up there, I tend to go somewhat crazy when it comes to chocolate >.

I think more people need to understand how long, hard, and expensive the chocolate-making process actually is. Then hopefully it'll give them a better understanding and appreciation for the amount of effort that's required, and how we really ought to be paying more money for our cheap 70p/$1 chocolates from the supermarket! Even if the quality and chocolate content/percentage is low, there's a reason for it. Mass-produced chocolate has gone down in quality in recent years because many big companies, like Cadbury's, don't pay their chocolate farmers and many have been accused of using cheap and slave labour... all in the name of making crappy, shit quality chocolate for the masses. So, there's a reason why, when you go to a chocolatier, the price is so much higher - there's so much more love and quality involved~!
