Do y’all freeze your cheese? I’m always afraid the texture will change once thawed

We freeze cheese quite a bit! I will say the kind of cheese makes a big difference too. Parmesan we freeze shredded. Most of our other cheeses we freeze in portioned chunks to shred as needed.
