Botvyanchi kheer is a traditional authentic Maharashtrian recipe. Botve are made for any auspicious occasions like marriage, thread ceremony. These are then dried at room temperature and kheer is made from it. This kheer is for naivedyam of God on that day. Do try this recipe and drop a comment for me. Ingredients:
• 4 tsp Botve
• 4 tbsp Sugar
• 1 1/2 cup Milk
• 1 tsp Ghee
• Dry nuts
• Raisins
• Cardamom powder
Method:
• Heat up ghee in a pan.
• Add botve and roast them until these get nice golden color.
• When botve begin to get nice golden color add dry nuts and roast
them until these turn nice golden.
• Take everything aside in the pan.
• In the same ghee ass raisins and fry well.
• When raisins are fried well and these puff up take them out into a
bowl.
• Take everything at the center again and mix well once.
• Add milk and cook until botve are cooked nice and soft.
• If needed add more milk as milk thickens up as botve get cooked.
• Keep on stirring at the intervals so that the milk won’t stick to the
bottom of the pan.
• When botve begin to puff up add sugar, raisins and mix well.
• Don’t add raisins with dry nuts as raisins being a little sour these
may spoil the milk.
• You can decide the quantity of sugar according to your taste.
• Continue to cook until botve are cooked nice and soft. Turn off
the gas and add cardamom powder.
• Mix well and botvyanchi kheer is already.
• You also can add few drops rose essence drops or rose syrup in
the kheer.
