I'm happy that Claire measures ingredients like flour and vanilla extract on camera, instead of having them already measured in a small container. It makes the video much more like home baking and way more charming. Like Claire!

I cannot believe that a serious baker measures flour by volume and not mass? The spooning method she uses is an attempt to standardize the quantity of flour which is the weight or mass of the flour. "Don't leave flour in paper bag because it settles and becomes dense." So ......measure by mass! One more variable now is controlled. Beautiful cookies!!

Claire is my favorite baker!! Her recipes are unique and intricate but still accessible for the average at home baker. Her apple tart, oatmeal cookies, and banana pudding are some of my favorites!

I’ve made her whole wheat pie crust, fruit tart, almond butter banana bread, malted forever brownies, brioche dough, speculos babka, marbled sheet cake, blueberry buckle, miso buttermilk biscuits, peach cobbler, caramelized apple pie, all in shortbread cookies, and butterscotch pecan pie slab and they’ve ALL been amazing 🤩

For me, it’s how her books are so well organized. Need to find a recipe for a specific dough because you have your own version of a recipe or inspiration? No worries because those are separate recipes that her own full recipes refer to. And the index at the end of the book allows you to search with multiple terms (is it a cake, with apples in it? Can find it under Cake and Apple!) I find myself grabbing her books instead of googling recipes 🎉

These are right up my alley! I love baked goods that look stunning but don't require a lot of technical decoration. Claire is truly the GOAT of baking in this generation. Gonna try these as is (who doesn't love chocolate? Heathens, that's who), and then maybe do a batch with some instant espresso in the dough and peppermint extract in the filling for a peppermint-mocha twist.

If you can't find cacao nibs and demerara sugar, will something like Oreos and chips ahoy work for the outside coating, or will those burn when baking? Or is there another replacement you recommend? And is the Greek yogurt/sour cream necessary or is there another substitute? I don't use either so I wouldn't want to buy some just to use 2 tablespoons of it
