Bâjiya is an authentic Ethiopian style falafel. It’s a popular Harari side dish, made mainly from chickpeas, onions, chilli, coriander and spices. Vegetarian friendly :)
Makes 3 batches. Each batch makes approximately 15 Bâjiyas.
Ingredients list
- 400g chickpeas
- 3 medium eggs
- 2 medium onions
- 5 spring onion
- 1/2 a full garlic (approx 6 cloves)
- 10-20 green chillis depending on chilli level desired
- 1 bunch of coriander (approx 75g)
- 3/4 to 1 cup gram flour (add more if consistency requires more flour to form a circular shape)
- 2 tbsp cumin and coriander mix
- 1 & 1/4 tbsp salt
- 2/3 cup fine golden or white breadcrumbs
- 1/2 tsp baking powder for each batch (1 batch = 1/3rd of the mix = approx. 2 cups of Bâjiya)
