BÒ KHO & Baby Shower - Chef Spuz - Spuzie IRL

Cooking some Vietnamese BO KHO for the first time! AND we get a surprise baby shower! This is the recipe I followed approximately:
Marinade:
1 kg chuck beef
4 cloves of garlic
2 cm~ fresh ginger
1 tbsp fish sauce
1 tbsp Chinese five spice
Stew:
2 yellow onions
4 cloves of garlic
2 cm~ fresh ginger
6 pieces of lemongrass
400 g crushed tomatoes
100 g cherry tomatoes
1 L~ beef broth
2~ normal sized whole cinnamon
2~ star anise
4~ bay leaf
3 tbsp tomato pure
33 cl Coca Cola
4~5 big carrots
Vegetable oil for frying
Salt & Pepper
Toppings:
Holy Basil / Thai basil
Fresh shallots
Lime
Fresh chili

Thank you for saying that! I am taking 1 month of when she is born and then I'll be doing some maternity leave here and there! So it'll be more sporadic the stream schedule with less streams overall but it's not gonna be completely silent :)

Now you gave me an idea what to cook this weekend. The recipe has more ingredients, and most likely complex flavors, than one of our Filipino dishes. Since you already tried this, I think you might try making Pares or Kaldereta. However, this Bo Kho is more akin to Kaldereta because of the tomato, beef, and carrots. Pares is more of like a beef stew with emphasis on the star anise and bay leaves.

Adding soda water/ coke as a braising liquid is actually pretty common, it can tenderize the meat too. By using coke you just don't have to put any sugar since you can already get that heart attack amount of sugar in the coke.

You can use coke or what ever sugar thing you like not a big problem lol. Do what ever you like to suite your taste bud. I don't cook with coke but i do white radish and coconut water for the sweetness of that dish , some cornstarch in the end to make it a little tiny bit thicker since i eat bò kho with bánh mì( bread)

I might have a lead on what's the difference between restaurant and your dish: -whole canned tomatoes instead of pureed ones (just buy whatever whole canned tomatoes, they all taste much better than puree for all kinds of recipes!) -MSG, you know uncle roger, well, he has a point xD -More fish sauce! I've figured out that fish sauce is a very key ingredient in thai food and sometimes food would taste very different from restaurant food if there wasn't enough fish sauce! -did you went too heavy om the five spice? My pov is everybody i love says 5Spice tastes like christmas and they don't want any of that in the food, thus not many european restaurants have necessarily adapted five spice into dishes or very few of it, just an idea ^^ Anyways, thank you for the cooking vlog, i love these c: You made me re-explore my passion for cooking a few years ago!!

2:16 Bò kho: The "Bò" pronounce like "buh" but with an O sound instead of U The "kho" pronounce like "more" but with an "KH" instead of "M" Also, never ever saw any recipe that use Coke ever, that's a new one :'D The recipe you use seem to have been localized, we have a specialized spice pack made from anise, cardamom, black pepper, coriander seeds, cari leaf, turmeric root, laurel leaf,...etc... Of course, it's gonna be very hard to find that specific spice pack over there so I'm guessing the coke and Chinese spice pack is kinda attempting to fill in the gap. Also, for the initial marinating process, we use ginger instead of garlic and ofcourse, the specialized spice pack instead of Chinese one. As for the simmering process, I think it's the difference in spices that were used. Our basic recipe is just garlic, onion, spring onion, and cooking oil. I get that most of those other spices are to make up for the lack of that spice pack but it's defo nothing I have seen before. But hey, in the Vietnamese spirit, "if it works, it works"
