萨姐sifu, I baked this last night and it is the BEST Basque cheesecake I have ever make. I just have my 2 pieces for my breakfast in Malaysia. More jiggling when coming out of the oven if you use the whipping cream. After coolling down, it looks and tastes as same as the one using thickened cream.

I used a 7-inch baking pan in the video. So please follow the calculation below for 8' inch pan: 6-inch round baking pan : 7-inch recipe / 1.3 (2 eggs + 1 egg yolk) 8--inch round baking pan : 7-inch recipe x 1.3 (4 eggs ) 9-inch round baking pan : 7-inch recipe x 1.7 (5 eggs) 10-inch round baking pan :7-inch recipe x 2 (6 eggs)

You can probably try a French brand called "Kiri" which is really nice cream cheese, however you will probably need 5-10% more sugar to get a sweet flavour.

Sorry for asking. Is 70g sugar put in 400g cream cheese sweet enough? I saw others use 120-130 sugar with this 400g of cream cheese.

If you like the cake to be a bit sweeter, you can add more sugar, I prefer light flavor.

if I dont have cake flour at house, what can use? all purpose flour? how to mix? what is the ratio for 15 g cake flour? 12g all purpose flour & 3 g corn flour??

You can just use all purpose flour in this recipe, no big difference. It would be better if you mix with all purpose flour and corn flour in this ratio. I believe you'd love this cake.
