Basanti Polao, also known as Mishti Polao, is a fragrant and slightly sweet Bengali rice dish. Here's how you can make it:
Ingredients:
2 cups basmati rice
3 tablespoons ghee (clarified butter)
1 bay leaf
4 green cardamom pods
4 cloves
1 cinnamon stick
1 teaspoon turmeric powder
1 teaspoon ginger paste
1/2 cup cashews
1/2 cup raisins
1/4 cup sugar (adjust to taste)
Salt to taste
4 cups water
A few strands of saffron soaked in 2 tablespoons of warm milk (optional)
1 teaspoon garam masala powder
Instructions:
1. *Prepare the rice:* Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain well.
2. *Cook the spices:* Heat the ghee in a large pot over medium heat. Add the bay leaf, green cardamom pods, cloves, and cinnamon stick. Sauté for a few seconds until the spices release their aroma.
3. *Add turmeric and ginger:* Add the turmeric powder and ginger paste to the pot. Sauté for another minute, ensuring the turmeric and ginger do not burn.
4. *Toast the rice:* Add the drained rice to the pot and stir gently to coat the rice with the ghee and spices. Cook for about 3-4 minutes, stirring occasionally.
5. *Add nuts and raisins:* Add the cashews and raisins to the pot, and continue to cook for another 2-3 minutes, stirring gently.
6. *Cook the rice:* Add 4 cups of water to the pot, along with the sugar and salt. If using saffron, add the saffron milk at this stage. Stir gently to mix everything together. Bring the mixture to a boil.
7. *Simmer:* Once the water starts to boil, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is fully cooked and the water is absorbed. Avoid opening the lid frequently to allow the rice to cook properly.
8. *Finish the dish:* Once the rice is cooked, sprinkle the garam masala powder over the top and fluff the rice gently with a fork. Let it sit covered for another 5 minutes.
9. *Serve:* Serve the Basanti Polao hot, garnished with additional cashews and raisins if desired. It pairs well with a variety of Bengali curries or can be enjoyed on its own.
