This looks good, but my supermarkets only carry the large globe eggplant. I'd just cut thick slices ... that would work. My favorite eggplant dish from this kitchen is still the "burnt eggplant and tomato tahini dip". It is so delicious.

A very nice recipe, but: I think it's better to use tinned tomatoes in April!!! Why should I find tomatoes tasty that grow in the greenhouse? Out of season? Not to mention aubergines! Seasonal recipes please!!!

I’m sure you could substitute olive oil for all of the butter, but I think a better solution would be to use olive oil for the caramelized onions and still use butter for the cumin/chili flake butter, because you brown that butter, so it has a distinct contribution to the dish.
