BACK HOME COOKIN'! | SQUASH CASSEROLE & MORE!

Hey family!! In today's video we get home from a quick mountain trip and we're ready for some good ol' home cookin'!
Squash Casserole Recipe:
4-6 medium yellow summer squash, thinly sliced
1 large onion, thinly sliced
1 tablespoon butter
1/2 cup grated Parmesan
1 cup shredded sharp Cheddar
1/2 cup sour cream
Salt and black pepper
1 sleeve of Ritz crackers, crushed medium to fine
Directions
Preheat the oven to 350 degrees F. Grease a 2-quart casserole dish.
Saute the squash, onion, and butter until soft. Transfer to a bowl and stir in the Parmesan, Cheddar, and sour cream. Add salt and pepper, to taste.
Place in the prepared casserole dish and sprinkle the cracker crumbs evenly over the top. Bake for 20 minutes or until the top is golden and bubbly.

Then i add little bit of parm or mozzarella and its the best when you don't have time to make homemade ! My kiddos love adding mozzarella the most .

Glad you all had a good time going to Pigeon Forge. You really need at least 3 to 4 days so you don't feel so rushed. There is no place like home though. The new feed you are giving the chickens seem to be giving you more eggs. That's great! I love squash casserole. I make mine similar to yours but I put a can of cream of chicken in mine. So good with pinto beans, mashed potatoes, mac and cheese. I can do without meat and be just as happy. My husband thinks he has to have a meat at supper time. Great video, now waiting for tomorrow night! Love ya! .
