Thanks for watching! Emilio made the soup up, so no specific recipe to follow, but this is what I witnessed: 1. Make your soffritto: chop carrots, onion and celery finely and stir in sight olive oil for 5 minutes 2. Add 2 cups of lentils to the soffritto, + a vegetable broth cube and stir for about 10 minutes 3. Add chopped bell pepper and any chopped cherry tomatoes stir for another 5 minutes 4. Add 1 can of MUTTI tomato sauce and let heat up 5. Add as much water to your liking 6. Once boiling, add your chopped kale 7. Let simmer for 20-30 minutes

Buon anno! I'm glad you enjoyed your vacation. I started my year by breaking off a close friendship-turned-relationship that was stressing me out all the time. It was a freeing decision but also sad...and lonely. I just stay busy with work and I'm already planning my trips for the year - the most important is going back to Santa Margherita Ligure for the second year in a row. My trip there in October 2022 was magical, and I booked the same ocean-view hotel already to give myself something to work toward! Sorry for droning on. What would I like to see from you this year? More shenanigans with your nieces, your Italian language journey, and just general life in Italy - positives and negatives. Also, maybe you can talk about your citizenship status? I like hearing people's decisions and steps necessary to becoming an Italian citizen. Thanks, as always, for sharing your life on this channel!
