3000-3500 seems low on the calories for a male person. I rocked 3500 on average on my last thru hike. And in 12 days I lost 2 pounds of body mass. If going longer I would definitely try and get 3500+ daily for 18+ mile days of hiking. I also am very macro oriented, 130 g protein min. I do love your breakdown video. Great details and info for folks to start their plan of fuel.

You're probably right... I didn't want to over exaggerate my intake. I think I'll go back and see if I can come up with a closer number. I know the peanut butter and jelly tortillas are about 500 calories each. I typically eat two for lunch.
