That looks scrumptious. Just note 'ketchup' is not Aussie it's American. We have 'tomato sauce' probably the same thing, but I hate the way we are being americanized. All the best you do good stuff

Looks absolutely beautiful and so delicious. I would make it from scratch JUST like you do. The best! Thank you. Wonderful. I ALWAYS use a milk wash. I HATE egg wash becuase I can always taste this stale egg flavor that definitely takes away from the pastry/pie crust flavor after it is baked. So I am happy you did the milk wash. Oh and NO NO NO ketchup!! Yikes

There is a recipe on here - the only alternative way to make mushy peas if you do not have marrowfat. Using green split peas and they are very acceptable - not the same as marrowfat. But hey anything that is really close. Thank you. Best, Rik

Wow Rik that looks really good , my problem is finding dried morrowfat peas in the states. Amazon has them but you need to rob a bank to pay for them. Do you think extra thick split pea soup would work as a substitute for mushy peas? Regards

Hi, Mate. For onions, I use very cheap, thin-bladed knives. The make is by a company called Penguin. Not a quality, expensive one. After years of cooking, I find the thin blade cut through the onions and release. The expensive chef knives, the onions cling to the knife. Now, it doesn't matter if you are only cutting slicing one onion; however, if you are slicing 70 kilos quick, the thin bladed cheap knives are better.

Vegemite is also salty, years ago I would put a tablespoon in boiling water in a mug, yum. Poor mans soup😂 Now Vegemite costs over $5 for a small jar. But I have to have it for toast etc. BTW, I'm a smearer, not too thick 😂👍🇦🇺

Interestingly, I have been in Australia almost 60 years; have spent time in all states, and have never seen a proper meat and potato pie. “Meat and potato pies” are generally shepherds pies.

Us Aussies know how to make a good meatpie, but a meat and potato pie is usually a Shepard's pie. Not potatoes in the meat pie. But either way for me is good.

Hi Rik. Sorry your wooden spatula packed in, bummer. But pleased to hear you say be careful, you don’t want to scratch the pan. I get so annoyed when you see chefs like Jamie Oliver , James Martin et Al, using non stick pans and scratching the hell out off them with metal utensils. Even copper pans, tin lined, no difference, let’s just scratch them to bits. They either have no sense or too much money. And how often do you see them and the pans all look new. Does my head in.

Hi Rick , your recipes are great. If you live in South Australia that's where you will get a pie glitter, one with mushy peas. My grandmother made her pies and.then put them in pea and ham soup.😊
