Rik, thank you for explaining to your viewers the waste of time that the horizontal or parallel cut of onions is. About 40 years ago, when I was a restaurant cook, I had a vendor challenge me on this. He was a big proponent of using that extra cut. I cut my onions exactly as you do and cut them just as finely as -- and more quickly than -- he did. Mind you, I have never been a wiz with a knife. It wasn't a matter of skill. It was simply a matter of logic. You're quicker than I am and I probably had a duller knife. You would have smoked me. Nonetheless, I was able to outperform that vendor. It's just a fact, as you point out, that the layers of an onion lend themselves to even, fine dicing with minimal effort. People would do well to think about your instructions and follow your examples. When it comes down to successfully cooking in a consistent manner and allowing for personal preferences, you're the best teacher I've seen on KZbin, so far. I have no doubt that many people's lives have been enhanced by your sharing of your culinary experience and expertise. Keep up the good work. Wishing you all the best. Respectfully, Bob.

Rick, I had never heard of cheese and onion pie before. My mouth is watering. Looks good as is but my mind is already wandering. There must be so many variations possible too. Add a bit of mustard powder or serve with mustard. Mix in some bacon or chicken into the filling? Pees or carrots? Add olives? I finally found those whole green pepper corns you used in another of your videos - toss a few of those in the mix? Serve with gravy or a wine sauce over top? Thanks. Look forward to making this for my wife and son!

My Oma use to grease the pie tin even if they where non stick, if the pie had cheese she would coat the lard with pre grated parmesan cheese base and sides to make a frico crust.

I totally agree about the danger and non-necessity of the parallel cut of an onion Rik. Onions are naturally formed in segments and dice cuts make them fall into little cubes easily. Cutting towards you hand is never a good idea! 😱
