I remember from my school days the raspberry and coconut sponge cake with custard. The smell coming from the school canteen pre-lunchtime was so enticing, I can smell it to this day 60 years later.

We loved this when we were kids in the 60’s. Today people would say “Oh my goodness, all that fat and sugar!”. But unlike kids today, we lived very active lives, most of it outdoors and we didn’t live in centrally heated houses. We needed those calories for energy and warmth. We also didn’t constantly snack in between meals.

Yep, I stayed out all day on my scooter. Mum would have to clean out the fireplace before it warmed up in the house. She would put the gas oven on first thing to keep us warm. She was so happy when dad had a gas fire installed.

A lot of dessert places near me sell these and the cornflake part is a little on the softer side. The ones I had in school the cornflake topping was hard and crunchy like a cornflake cake. I enjoy them that way a lot more. Gives nicer contrast

Hi Rick, I had a go at this recipe last week, however things didn't go to plan. I tipped the ceramic baking beads into the pastry dish without putting the lining paper in. After I realised what I had done I started removing the beads, but it was a complete failure as the beads just sank into the pastry base and sides, resulting in one rather sticky mess. What a job cleaning everything up afterwards.

We had amazing school meals in the 50/60s all cooked fresh on the premises every day. 😋😋 I loved e everything , even the prunes and custard. We used to have custard pie with pastry base, thin layer of raspberry jam, thick layer of custard topped with a sprinkling of coconut 😋😋 Jam tart with coconut on top. Chocolate sponge pudding with pink custard. I could go on for ever 😂😂 Good video, I'm giving the a go 🙋

I saw your " flapjacks" recipe one time and started making them for my family and they loved them so much they had friends and teachers asking me to make them. In Australia we make Honey Joys (recipe on the cornflakes box) which is basically the cornflakes mixture in patty pan papers. Staple of very kids party ever. I like to fancy them up with slivered almonds and cranberries.

Here in Aotearoa/New Zealand when l was at boarding school 50 years ago, we had a pudding that was only ever known as Boarders' Favourite. It had a base of buttery cornflakes flavoured with cocoa and a touch of cinnamon, a layer of custard and a meringue top. It really, really was our favourite! Sadly it disappeared from the menu and despite much pleading, was never seen again. I'm guessing that when that particular cook left, she must have taken her recipe with her. I've tried so many times over the years to replicate it but, have never even come close. All these years later l still think of it and every time l see a dessert with cornflakes l get so excited, thinking THIS might be the one. This DOES look great and l'll probably make it but, alas, it is not THE Boarders' Favourite. If anyone has ever heard of it or something similar, l would be so grateful if they would share a recipe.

At my school the cornflake filling was made with toffee that was brittle/hard and chewy... we used to have to bash it with the spoon to break it up - it was delicious and the best version I've ever had.

We had a cornflake dessert at school in 70’s I remember it had stewed apples on a pastry base with a similar topping to this but with some light creamy topping under the cornflakes, have looked everywhere for that recipe, never found it 💙🏴

Definitely making this gorgeous creation next weekend. I think I would use strawberry jam but a good one from the shop and slacken it off with some lemon juice for tang. When I make homemade raspberry jam in the summer I will of course use that! Thankyou for the idea! I wasn’t lucky enough to have this at my school. We had chocolate or vanilla tray cake covered with thick icing and served with custard. They were also pretty epic to be fair! Just 1 last thing that was way more than a TSP of vanilla but you can be forgiven because you want a custard to be full on with vanilla!

My grandmother used to roll her rolling pin across the tart pan, cutting off the extra dough hanging over the edges before pre-baking the crust.

Good tip - however if you leave an overhang when blind baking the tart pastry cannot sink below the level of the tin when it bakes. Stick what works for you. Best, Rik

Last time I saw Cornflake Tart was ~ over 60 years ago! A real blast from the past. High energy food for active children and adults who did physical work outside. Thanks for the memories Rik! Have a couple of real oldtimer suggestions, one from The Depression that very few people still make and would create some curiosity and memories: Tomato Soup Spice Cake (from Campbells) with cream cheese icing, and Chocolate Sauerkraut Cake. Both have interesting histories on how they were created. Don't know if you are familar with either, but despite their weird ingredients they are delicious. These will get some interesting reactions and comments. Not expensive to make either.

Back in the 1940s and 1950s my mother made a treacle tart which was golden syrup and breadcrumbs. She later on used cornflakes but never did add all the other ingredients.

Brilliant, I’m so pleased YT suggested this to me. We used to have this at school many moons ago and we called it “dead flies” as they always left it in the oven for too long and burnt or scorched the tips of the corn flakes and it ended up looking like a tray of dead flies🤣🤦🏼♀️. I also learnt something new about how to make custard - thank you for that.🥰

Best meal I ever had as a school dinner was a homemade minced mutton pie with a side of chips and carrots. With gravy too ofcourse! I didn't even know what mutton was but I loved minced beef pies and just figured it was the same. Really hard to find minced mutton now.

My favourite was mutton & barley, in a lovely thick gravy. Still add barley to many stews & casseroles, wonderful stuff. Used to make a casserole for my child when young chicken thighs, carrot celery etc & barley. I would warn her of the bones & remove them when cooked. We were in the supermarket one day & she shouts, “mammy, can we have bones & barley for dinner”! I was mortified. You should have seen the looks! 😂

Omg I remember the cornflake tart with loads of custard what absolute heaven. Those were the great days when we had delicious school meals made by awesome cooks, we should have appreciated them ladies more.😘 Unfortunately I can't enjoy it nowadays because I am a diabetic 2 suffer.😢

This looks extremely delicious Rick! Just my sort of old fashioned pudding, like treacle tart. One of my other favorites that doesn’t seem to be known was I think they called it Danish Apple Cake (or pudding ?) at school - a sort of sponge (not light) with a layer of jam and apples on top all covered over with crisp meringue.

Our school had chocolate crackle, which was always a top favorite. Basically the same idea, butter, sugar, chocolate powder and cornflakes. This one is a bit more sophisticated 😉
