I prefer lower temperatures, it gives me a lot more leeway on the timing. I'll use a 350 degree oven if I am in a hurry, but 275 is a sweet spot for me.

Nice... Definitely, a lower temperature gives one more flexibility. I'm guessing that it takes an extra 20-ish minutes... Not a big deal if you are planning ahead. Thanks for your comment.

Wowzers.... spendy. I paid around that much a couple of years ago, but it was in Victoria, and the bacon was super lean, yielding only a few tablespoons of fat... it was amaze-balls!

Your oven ain't working. 27 min at 350 that bacon should be WAY more cooked, if not completely done and crispy.

Could be... It was also a thick cut bacon... The thinner version was done faster. Probably the best advice is to set a timer and keep an eye on your bacon, or anything else in your oven. Thanks for checking this episode out, I hope you check some of the others... Feedback is appreciated.
