No trip to the Bahamas is complete without a scavenger hunt for West Indian Topshell Snails. These critters are fun to find and delicious to eat! We found the perfect spot to gather some jumbos, then brought them home to cook them up a new way we hadn't tried before. We stir fried them together with a vegetable medley and covered them in a phenomenal Thai Red Curry Sauce. It was perfect! Come along and see how much fun we had paddling out to a secluded island, playing hide and seek with the topshell and then taking them home to prep, clean, cook and eat them! Hope you get to try this recipe someday soon. It was surely yummy!!!!
