Bajan Conkies
2 1/2 cups corn flour/corn meal
4 cups grated coconut (best if you use the coconut in the shell/grater on the fine side)
1 very large sweet potato grated
5 cups grated pumpkin
200grams non salted butter (melted)
1 cup brown sugar
4 oz raisins
3/4 teaspoon salt
1 1/2 teaspoon all spice
2 teaspoon cinnamon
1 1/2 teaspoon nutmeg
Grater 1/4 of a nutmeg pod
1 teaspoon vanilla extract
1 tablespoon mixed essence
1 cup evaporated milk or if no evaporated use full fat milk
These can make around 20 conkies. Half the ingredients if you are making less.
Please save all the left over discarded pieces of the banana leaves/centre pieces of the leaves. Place these at the bottom of the saucepan for steaming. You do not want the conkies sitting in water.
To avoid this, if you have no leaves use a steamer.
Allow about 1 hr 15 mins to cook.
