Bajan Conkies
2 1/2 cups corn flour/corn meal
4 cups grated coconut (best if you use the coconut in the shell/grater on the fine side)
1 very large sweet potato grated
5 cups grated pumpkin
200grams non salted butter (melted)
1 cup brown sugar
4 oz raisins
3/4 teaspoon salt
1 1/2 teaspoon all spice
2 teaspoon cinnamon
1 1/2 teaspoon nutmeg
Grater 1/4 of a nutmeg pod
1 teaspoon vanilla extract
1 tablespoon mixed essence
1 cup evaporated milk or if no evaporated use full fat milk
These can make around 20 conkies. Half the ingredients if you are making less.
Please save all the left over discarded pieces of the banana leaves/centre pieces of the leaves. Place these at the bottom of the saucepan for steaming. You do not want the conkies sitting in water.
To avoid this, if you have no leaves use a steamer.
Allow about 1 hr 15 mins to cook.

My mom made the best conkies ever sadly she passed and we never got her exact recipe and I’ve been looking for a good recipe to make conkies close to how I saw hers look and the ingredients she used.I’ve watched a whole lot of conkie making videos and when I saw yours it immediately reminded me of how mummy’s own looked and so I’m gonna use your recipe and I’ll let you know how they turn out.thank you!

For this version of conkies 🫔 evaporated milk is being used. Recipe passed down.

@@cookingwithpatbest2603 What @maxinedottin1956 doesn't know is that milk (and eggs, which you didn't use in this recipe) help make conkies mellow, so they don't feel dry while being swallowed. Using less sweet potato and substituting the shortfall with more pumpkin also helps with that. The first time I made conkies (3 years ago) I used fine corn meal. This year was the first time since then that I made more conkies, and I used fine corn meal again (the exact one shown in your video). According to my info, the only difference between corn meal and corn flour is that the grains of the latter are finer than those of the former. However, since you said in the video that corn flour tastes much better, I'm going to use that instead of corn meal the next time I make conkies. Here's another tip: add a bit of shortening to the butter and avoid stirring the batter any more than necessary.

Thanks for your response. You will not regret using the corn flour and yes these were indeed absolutely mellow. My granny never used egg and she is my hero, so I never will. 😊👍🏽
