Baked eggplants! Everything is very simple, fast and nutritious! 🍆🍅🧀

Ingredients (2 servings): 2 eggplants, 6 cloves of garlic, salt, black pepper, ground cumin, 70 ml of olive oil, 1 onion, 300 g of minced chicken, 200 g of tomatoes in our own sauce, 1 ball of mozzarella, 20 g of marinated chili pepper (you can use jalapeño pepper), 20 g of fresh parsley.
Preparation: wash the eggplants, cut lengthwise into two parts. On each half, make incisions in the form of a grid. Cut the garlic into slices. Place the garlic in the eggplant slices. Salt, pour half of olive oil. Bake for 25 minutes at a temperature of 180 degrees. Meanwhile, heat the remaining olive oil in a pan. Finely chop the onion. Fry for 2-3 minutes. Add minced chicken, mix and fry for 5 minutes. Add tomatoes in their own sauce and spices. Fry for another 15 minutes. Let the baked eggplants cool down. Then crush the eggplant pulp with a fork. Spread the meat sauce on top. Next, we spread the mozzarella. Bake for 10 minutes at a temperature of 180 degrees. Before serving, garnish with pickled chili pepper and fresh parsley.
