BAKED MACARONI WITH PINEAPPLE
INGREDIENTS FOR BOILING THE MACARONI:
• 3 cups water
• 1 cup elbow macaroni
• 1/2 teaspoon salt
• 1/2 tablespoon oil
FOR THE CHEESE SAUCE:
• 3 cubes butter
• 1 tablespoon olive oil
• 2 tablespoons all-purpose flour
• 1 cup hot milk
• 1 bowl grated cheese
• Salt to taste
• 1 teaspoon sugar
FOR THE MACARONI:
• 1 bowl cooked macaroni (al dente)
• 2 cubes butter
• Salt to taste
• 1 teaspoon sugar
• 1/2 cup pineapple chunks (canned or fresh, drained if canned)
• 1/4 cup milk
FOR BAKING:
• Additional grated cheese for topping
METHOD TO COOK THE MACARONI:
• In a large pot, bring 3 cups of water to a boil.
• Add elbow macaroni, salt, and oil to the boiling water.
• Cook until the macaroni is 60-70% done (al dente).
• Drain and grease the macaroni with olive oil to prevent sticking.
PREPARE THE CHEESE SAUCE:
• In a pan, heat 3 cubes of butter and 1 tablespoon of olive oil over medium heat.
• Once the butter is melted, add 2 tablespoons of all-purpose flour.
• Stir continuously for about a minute to cook the flour (this is called making a roux).
• Gradually add 1 cup of hot milk to the roux, stirring constantly to avoid lumps.
• Add the grated cheese to the sauce and stir until melted and smooth.
• Season with salt to taste and 1 teaspoon of sugar.
• Continue stirring until the sauce thickens to a sauce-like consistency.
• Turn off the heat and set the cheese sauce aside.
COMBINE MACARONI AND CHEESE SAUCE:
• In a pan, heat 2 cubes of butter.
• Add the cooked macaroni and toss to coat with butter.
• Season with salt to taste and 1 teaspoon of sugar, mixing well.
• Add the prepared cheese sauce to the pan, followed by 1/4 cup of milk. Mix for 1 minute to combine.
• Add the pineapple chunks and mix until the macaroni and pineapple are evenly coated with the sauce.
BAKE THE MACARONI:
• Preheat your oven to 180°C (350°F).
• Transfer the macaroni mixture into a baking dish, spreading it out evenly.
• Sprinkle additional grated cheese generously over the top.
• Place the baking dish in the preheated oven and bake for 10-15 minutes, or until the top is golden brown and bubbly.
• Remove from the oven and let it cool for a few minutes before serving.
