Thanks for the recipe John! I made a perfect date night using a variation of this. My stuffing was shallots, leeks and panchetta. Most awesome. Made stuffed portabello mushrooms for the side using pesto, gorgonzola and almond slivers

Chef, I made this recipe for Christmas -- my first time ever making a baked brie. Of course, it was a hit. I used the rope trick to cut the cheese, and made a whole baguette worth of crostini to go with the Brie. I even added a decorative touch on top, similar to your grapes: snowflake-shaped cutouts. However, I did one thing differently: rather than bunch up the dough on the bottom, I bunched it up on top. This way none of the melted cheese leaked out of the seems. I also poked holes in the crust with a bamboo skewer half-way through the bake. The cheese leaking out the bottom always bums me out. So, this was a decent adaptation. Great recipe, Chef! Thanks for the inspiration. Happy New Year!

You can cut home baked cake layers the same way but with dental floss. They come out perfectly even like the brie did.

Made this yesterday for lunch for the family. I followed your recipe and even the hint of using dental floss to cut the brie in half. Great idea and it worked so easily! Enjoyed it very much. I've made brie before but this was the first time using puff pastry. The only difference is I served honey on the side. Next time I make this I'll add the honey inside with the other ingredients. We do one version where the “stuffing” is just a thick layer of dark brown sugar inside brie and/or between brie and pastry layer, and then add berries in the pan on the outside so they bake at the same time. Different flavor but sooooo good. It’s basically caramelized brie with hot juicy berries as a garnish. Try it, you’ll love it, I promise.

Baked brie is one of my favorite things to make and serve. I like to smother the brie in aprict preserves before closing it into the pastry. It adds another gooey note. Try this: a slice of brie, a quarter cup of slivered smoke salmon placed inside the puff pastry, which is crimped to form a small cup. Drop in a raw egg, then bake the cups on a parchment lined pan until browned, careful to only cook until the eggs reach no more than medium. You want the yolk to gel and run like lava and meld with the molten brie and bits of salty fish. Top with a lemony hollandaise. The puff pastry and hollandaise makes the whole thing magic.

I am absolute trash for onions and like some acidity to cut the richness of brie, so caramelized onions with balsamic vinegar are usually my go-to. No one else in the family seems to like onions as much as I do, but the way I see it, that's not a bug, it's a feature... Brie en croute is one of the few things I will suffer my dairy allergy for.

I loved this recipe, mine turned out great! A perfect and really easy addition to my holiday recipes, thanks Chef John! I used figs and walnuts and that was a wonderful combination, on top of your perfect suggestion of eating it with persimmons. I also had placed the wheel of brie inside the freezer for like 10 minutes before slicing and I was able to cut it with a large knife with no problem so if people don't want to try the string, it still can work (*the cheese was not at all close to being frozen though so I'm not suggesting to actually leave it in there that long). Either way, whatever works for you and it's super easy so definitely give it a try!

Now is the season for fuyu persimmon in Japan. You see them everywhere =)). If you know a few local people and greet them in the morning, they might just give you one :)). It's partly because Japanese people are generous, but also partly because they have too many persimmons.

I loved that opening pic... Persimmons on the table... YES!!! Too few people know about Asian persimmons, or only know of the bitter, astringent, heart-shaped variety that's been grown in North America for at least a century... Asian persimmons are absolutely delicious, and amazingly beautiful fruits! To see what appears to be a Hachiya, or perhaps a Fuyu variety persimmon sets my heart aflutter! Ok, maybe it doesn't really set my heart aflutter, but it's still quite heartening to see one of my most favorite (and widely underappreciated) fruits, sitting near that lovely baked Brie! Yum! Please don't tell me that it was only there for appearances... I may have to cry if that's the case! Edit: ignore the last bit! Lol 😎 Awesome! Also, Hachiya persimmons are as delicious as the Fuyu variety... Give'em a try!

Thank you for the Bond technique, which I will steal without compunction. I make an occassional baked brie but with finely chopped parsley, garlic, grated lemon rind and a splash of lemon juice. Always goes down a storm at parties, and no one seems to know how I did it....

When I worked at Central Market in Austin Tx in Catering, I used fresh Brioche dough from the bakery, sliced portobellos on top of the Triple Brie cheese which was completely coated with pesto. It was a meal in itself, puffed up and double in size. Great brunch, served with berries. I will remember this easy way of slicing a cheese and the pretty grape cluster decoration.

A jewish tradition is to poke slivers of garlic into a brie wheel before you bake it. It is criminal how simple and delicious it is. Cant wait to try this version.

Ive made this a lot put I just spread jam and alonds on a full brie wrapped it in puff pastry and threw it in the oven. Was always really good but this way looks better.
