Thank you for this video. I ran out of bread yeast and decided to use beer yeast I had in hand. Amazing flavor! It's best to ferment it for at least 24 hours.

Cheers, I went out and bought 10kg of flour today, but couldn't find any bread yeast, anywhere. Damn virus. You've made me feel much better now knowing I can just use beer yeast (which I knew would be ok, but had to youtube it to confirm, and this video popped up). We've been told to work from home till 15th April (not sure why the 15th April) but I'll be surviving on beer and bread.

I have some supplement from some kind of yeast for digestion named "strong wakamoto" that contains Aspergillus oryzae NK and some kind of lactobacillus. They said the aspergillus oryzae nk is commonly used for sake and soy sauce brewing. Would that work? 😅

You should try using leftover yeast slurry from brewing beer. I'm planning on trying the yeast from my latest beer when i transfer it to keg. Using kveik could also be interesting.

@@mdimtiaz4178 Ale beer yeast is the same species as bread yeast. Different strains but same species. I've used beer yeast for bread a few time's now. It works. I'm using leftover beer yeast for baking. Not new dry or wet packets. I've had to adjust amounts, temperature and time a little to recipes. But have overall I've been successful. Just monitor dough for rising. I would not recommend using yeast straight from strong beer's like IPA'S. It can carry hop bitterness into bread. You may be able to use dry beer yeast packets for bread interchangeably with dry baking yeast. I haven't tried that. You could easily enough make a starter to grow more yeast and keep it going if yeast is hard to come by for you.

Hi! Thanks for the video. We have a lot of "fresh" yeast from our home brewery (the last one beer was Pale ale), gathered in Fermzilla's container. Can we use it to make bread? And how do you think, what the proportion with the flour should be?

Yes you could use it. The proportion I ant answer, you have to experiment. You could try a table spoon for a loaf I guess. If it's to little it's just mean that you have to wait a little longer for it to proof. But I think that would be a good start.

I enjoyed that experiment ! I tried some bread with S04 and it tasted really good, but I mixed the yeast with a little warm water and honey before adding it to the flour.

I am suing my old yeast from making wine. Once I rack the wine into another container, I take the old yeast and make bread with it. It adds a wonderful flavor to my baking. The extra acidity seems to give it some good shelf life.

Yes I usually only bake sour dough when I bake. That fermentenation will be much longer. This was just an experiment.

I tried S23 yeast that had been harvested from a previous beer in a pizza base, it was the best one I had ever made!!! Trying Bavarian lager yeast in a pizza base today👍🏻🍻

What I really do not understand is why do you have to mash the malt to convert the carbs into sugar for the yeast. When baking bread the beer yeast can also convert carbs. Is it a different kind of "fermentation". As far as I understand the fermentation in bread also creates CO2. Does it create alcohol too? What is the difference, if there is a difference?

Malt are also malted. In baking we just use unmalted grains. So in that case you could even stretch your question to why we just don't use unmalted grains and no mashing. Some sort of fermentation will kick in. We saw that in this video. But it wouldn't ferment out to a finished beer. Never tried it though. Sounds like some interesting topics to try just for fun. I made a bread before with beer. It was a flour mix you mix some beer in and bake straight away. I thing the carbonstion in the beer gives the bubbles. I used a double ipa i didn't like and the bread was really nice.

Another option would be to use yeast sludge from a beer fermentation for the bread. Perhaps wash it first to get rid of the trub.

if you only let them go for 1h you wont get bigger airpockets. if you want that, you need at least 12h with less yeast, so the gluten in the dough can bind, and also you want the dough to be less dry than yours

You're so right, I only bake sourdough normaly. Cold fermentation in the fridge for at least 24hours before I ferment it warm after shaping the bread.

You should brew a Saison beer. Bottle carb it with the same yeast, then use the yeast to bake some bread. Even better, use the leftover yeast (from a just opened bottle of the beer), to bake some bread! Yea!
