Mamoul recipe:
Ingredients -
8 1/2 cups fine semolina
4 cups coarse semolina
1 teaspoo Mahlab
3 tablespoons mamool spice mix
3/4 powdered milk
1 cup powered sugar
1 teaspoon nutmeg
3 1/4 cup ghee room temperature
4 ounces butter melted room temperature
1 tablespoon yeast
1 teaspoon sugar
1/2 cup water room temperature
4 packages of baking dates
Unsalted pistachios
1/4 rose water
Dough -
1. Combine all dry ingredients in a large bowl
2. Combine melted butter and ghee
3. Slowly add melted butter/ghee mixture to dry ingredients and mix well
4. Set dough aside for 24 hours and mix a few times during the 24 hours
5. Combine yeast with one tablespoon of sugar and 1/2 cup of water and let it sit to activate 15-30 minutes
6. Pour the yeast over mamoul mixture
7. Add water a little at a time to dough until consistency is even
8. Let the dough rest 15-30 minutes before forming cookies
Date mixture -
Mix 4 packages of baking dates with cinnamon, nutmeg, and olive oil
Pistachio mixture -
Mix chopped pistachios with sugar water and rose water
Form cookies and bake on a baking sheet for 15-20 minutes at 350 degrees F or until golden brown. Enjoy!
