Cooking With My Arab Mother-In-Law! Making Kabsa

Learning how to make Kabsa with my mother-in-law! One of my goals this year is to learn how to make Arabi food. Kabsa was the first meal I ate at her house and she is the best at making it!
KABSA RECIPE
Ingredients -
Basmati rice (we used 5 cups of basmati rice because this was for a lot of people!)
1 whole chicken (cut into 6 pieces)
1 can tomato puree
2-4 garlic cloves
4-5 onions
1 jalapeno
3 bay leaves
2 dried lemons
2 dried limes
Kabsa spice mix (1 tbsp whole coriander seeds, 1 tbsp whole fennel seeds, 1 tbsp whole black cardamom, 1/2 tbsp turmeric powder, 1/2 tbsp dried ginger powder - grind to a fine powder)
My mother in-law boils the chicken and uses the broth from the that to make the rice.
1. Sauté olive oil, 1 whole onion, 2 garlic cloves, and 7 spice in a pot. All chicken and cute until browned. Cover chicken with water and let it boil for 3-45 minutes or until cooked. While cooking, take off foamy layer.
2. Wash basmati rice and set to the side.
3. In a separate pot, sauté thinly chopped onion until caramelized. All tomato puree, 2 large tbsp of cabs spice mix, 3 bay leaves, 1 jalapeño, 1 dried lime and 1 dried lemon. Mix together.
4. When chicken is done cooking, add to a separate pan and cover chicken with a little bit of tomato sauce. Set aside to broil in oven when rice is done cooking.
5. Add rice into the tomato sauce and mix. Sauté for 3-4 minutes.
5. Add broth from chicken into the rice and cook until rice is done.
6. Broil chicken in the over for 10-15 minutes.
7. When chicken is done, add rice to a serving dish and place the chicken on top. Garnish with peppers and pine nuts.
