I just stumbled upon your one of the video today, and I am obsessed! Specially your fundamentals of baking. I am not a professional Baker like you, but I have tried my hands on alot of baking recipes n I have barely failed. But, I actually never understood what is the use of specific items in baking. So thanks to you, that I can now actually understand the science behind the ingredients you use ❤️ uh go girl!!

This was very helpful. I’m a chemist and like to cook. I love learning the chemistry of cooking. One note for you, the term is base not basic. Use the term base like you use the term acid. The term basic is used like the term acidic. Thank you again for the video.

Hi Bettie.. Thanks for the info.. Banana bread recipe usually calls for baking soda.. Could you please clarify whether banana is an acid or the science behind adding baking soda to it.. Thanks

It depends on the recipe. If the recipe calls for an acidic ingredient like brown sugar, honey, buttermilk, or sour cream then the baking soda will interact with that. But bananas are not acidic.

Thanks so much for the vid as always! Not a baking question but I have been seeing Fried Chicken recipes where buttermilk is used but no Baking Soda. What’s the purpose of the buttermilk then? Thx.

Likely for the creamy texture, sweet-ish flavour and/or its wetness being helpful in holding on to a coat of breading. I don’t know for sure, but I hope this helps. 🙂

Wonderful video & Love this information !!! The only little critique I would have is in the beginning of this video I was really excited to learn about the differences but I kept wondering what acidic ingredients were.... So maybe in your future videos could you say something to let us know you will be giving some examples later in the video. For me I would have been able to concentrate better on the information knowing you planned to talk more about that. I really appreciate you sharing your intelligence!! 👌

Im still a bit confused here. I understand now what the difference in both are but WHY USE BOTH. Why not just use more baking powder if you need more rise and not use both. Seems like baking soda is never needed.???

I find adding too much baking powder in recipes will give it a metallic taste. Also, baking powder gets old and loses its effectiveness.
