I believe Gao herself does the English translations. She has a mirror channel with narrated videos in English, but it seems she stopped doing them a few months ago.
*Amazing! In USA, we never use soda ash. Baking soda?? Yes. A lot. For many things. When baking breads, cakes, use alone, or with toothpaste, use a little bit to gargle with, too. We also will pour half cup of baking soda down our sinks, then, we'll pour white vinegar..... This very special blend bubbles up a lot, & can help clear out a clogged drain. We also place a box of baking soda in the refrigerator to keep any bad odors from strong smelling foods away. I greatly appreciate your tutorial. I learned how soda ash can help with certain recipes, etc. Very informative. Have a great day.*

Ever tried lutefisk? :-) Soda ash is used to neutralise the lactic acid generated by fermentation. Over here people tend to like this sour taste, such as in sour dough bread. However it does not work well with steamed food, or I say people do not like it in general. I personally do not like too much soda ash in the dough. It gives out an off taste for me, and that yellow colour does not help either.
