Hi! I see your heating element is only using bottom heat. Am i correct? I have an oven with the fan. Would you suggest I turn it off and also use lower heat only?

Not totally necessary, you can use rolled up towels soaked in the boiling water in a pan instead. The point is to keep continual steam flowing for that first part of the bake.

I don't have scoring tools, banneton baskets, or a Dutch oven, but I have baked a few loaves that taste great! I like baking in the crockpot 😉

For thousands of years, people have not have those things- please don’t let that stop you! No proving basket? A small colander will do, I used one for a long time. If you can get a linen or cotton type towel to line it that would help. Don’t have those things? It’s truly okay. Shaping bread dough into a boule (round shape)is worth learning and you can find a lot of info online teaching you how. You don’t need a Dutch oven (though when you can get one it will be worth it). To start with baking straight in the oven or on the back of a sheet pan is still worth it. Dutch ovens help with crust quality and “oven spring” (height of finished loaf) but it’s not necessary to have a yummy loaf of bread. Lava rocks are not something I’ve ever had and while I have a lot of bread baking tools these days I don’t think I’ll ever worry about them. I use a cast iron pan preheated in the bottom of my oven and put a few ice cubes in it to steam when I load in the dough to the racks above. It does the trick. Lava rocks are completely unnecessary.
