Faux Sourdough bread recipe without starter Complete Written Recipe: merryboosters....
"Sourdough Bread Recipe without starter"! Can we make a sourdough bread without a starter. The fact is that, it is not possible. Because a bread is said to be a "Sourdough bread" when it is made with a sourdough starter. But we can make bread very similar to a sourdough bread both in it's texture and flavor, without using a sourdough starter.
The secret to this Sourdough Style Bread Recipe is, "a high hydration dough" and "long cold fermentation". In this Sourdough bread recipe without starter, we use 80 % hydration dough and overnight fermentation of dough in fridge for at least 18 hours.
Another way that we can make sourdough style bread, is by using a preferment like poolish or biga. While using a preferment, we can achieve very similar result.
Sourdough bread, with its crackly crust and soft, airy crumb, has captivated bread enthusiasts for centuries. The tangy flavor, complex texture, and artisanal appeal make it a favorite among bakers and eaters alike.
However, traditional sourdough baking can be intimidating for many home bakers due to the meticulous process of maintaining a starter, performing repeated stretch-and-folds, and kneading the dough.
In this recipe, we will explore how to make a delightful faux sourdough bread with just four ingredients and minimal effort. This recipe bypasses the need for a starter and complex techniques while still delivering a loaf that rivals classic sourdough in taste and texture.
Honestly, the bread made in this way looks very similar to a sourdough bread, it has got amazing crispy crackly golden caramelized crust and soft crumb with open pores.
But the taste of "real" sourdough bread is something unique and is the result of action of both bacteria and yeast; as a sourdough starter is a symbiotic culture of a variety of yeasts and bacteria.
But in this "fake" sourdough bread recipe we are using commercial yeast as the fermenting agent and the flavor will be slightly different to real sourdough bread.
If you are familiar with baking with sourdough starter, you will know that the taste of sourdough bread will be slightly different every time we bake. Its because lot of factors like the amount of sourdough starter, the ambient temperature of the dough, the proofing time etc will also play a role in determining its flavor.
So, as sourdough bread has a broad spectrum of flavors, I can surely tell that this No Knead Artisan Style Faux Sourdough bread can be included in any of the lower bandwidth of this spectrum.

Though you know this it might be useful for your viewers. This is the best way to max. the flavour using yeast, but for those who want to give it a try, A natural leaven bread, sourdough bread develops far more flavour and it need not be sour. Sour sourdough is more American style. Bread flavour comes from acids in the fermentation reacting with alcohol and other fermentation products to make bread flavour. A natural leaven (Sourdough) produces more of these. Naturally leavened breads stay fresh far longer too. I hope this is useful to folk.

Best bread recipe out there? No knead, No folds, low yeast, fridge versatility. You do need a dutch oven but who doesn't on sourdough. It works! Thanks for the new concept.

THIS is THE BEST yeast loaf I've ever made!! So SOFT, but still a rustic loaf. Would do very well in a loaf pan, I'm thinking. But you have to do the long "ferment" to achieve this softness and amazing crumb...delicious! It's a very simple loaf to make....just extra time; but well worth it! Thank you!!

😊 This looks LOVELY. I have a question... Following the 18 hours in the fridge, does the dough need to come to room temperature before the first shaping ? Or do you gently stretch it into a rectangle and fold it as soon as flipping it out of the bowl ?

Sorry, I don’t recommend using 100% whole wheat flour. It’s better to use some part of flour (30-40%) as whole wheat flour 👍

When you put the bread back in the oven for second time did you put it without the cove?

Yes, after the first 25 minutes, reduce the oven temperature, remove the lid and bake it open for another 20-25 minutes 👍

🙂 The dough is on its final rise right now in the fridge ! As I am rewatching this video, it looks as though the bread is removed from the glass baking dish during the second half of baking. Is this correct ? Should I take it out and set it directly on the oven rack to finish ? I'm HOPING it turns out !! 😊 🤞🏽

This will be now be a 'go-to' recipe. I make baguettes on occasion, and I think people will appreciate this round, rustic loaf as well. For how long and at ehat temperature do you have to heat the baking dish to make the dutch oven?

We need to place the baking dish in the oven while we preheat the oven to desired temperature ; the duration to reach 480 F heat may vary from oven to oven. For me it took 15 minutes to reach that temperature.

To make this kind of breads, we need an oven safe dish with lid. If we don’t have glass vessel, we can use cast iron Dutch oven which is great for making this breads.The lid will help to lock steam inside which will prevent the dough from drying and will help the bread to rise beautifully. Also we can create steam inside the oven by spraying water and also by placing a pan with hot water inside the oven during baking. I don’t need to sift flour while making yeast breads. It will not make any difference. I do sift flour, to make it lighter and it helps when making cakes especially sponge cakes.

@@bincychris If it helps, I'm pretty sure that commercially made "sourdough" bread includes some form of acid (citric, ascorbic, vinegar, etc.) to create the sourness. As a result, commercial "sourdough" tastes unnaturally sour compared to bread made with sourdough starter.
