Tips and tricks
1. Gunakan tepung protein rendah karena cocok untuk tekstur bakpao yang lembut dan menghasilkan pori pori yang lebih kecil serta warna bakpao lebih putih dan cerah karena mengandung lebih sedikit gluten.
2. Tepung tangmien terbuat dari pati gandum. Tepung tang mien tidak mengandung gluten. Oleh karena itu warna bakpao akan lebih putih.
3. Gunakan air dingin atau susu dingin. Air dingin atau susu dingin membuat tekstur bakpao lebih halus. Membuat bakpao membutuhkan waktu yang lama. Air es membuat adonan bakpao tidak cepat "matang" saat dibuat.
4. Ganti minyak atau mentega biasa dengan mentega putih. Ini akan membuat bakpao lebih lembut dan putih.
5. Masukkan mentega putih atau shortening terakhir. Memasukkan shortening di awal akan membuat adonan bakpao menjadi bergumpal.
6. Jika Uleni adonan dengan tangan, dengan gerakan seperti mencuci baju, maka adonan akan elastis sekitar 20-30 menit. Tergantung banyaknya adonan dan kecepatan tangan. 7. Masukkan air dingin sedikit demi sedikit jangan sekaligus supaya glutennya terbentuk.
8. Jangan overproofing karena bakpao akan berbau asam dan kempes setelah dikeluarkan dari kukusan.
9. Jangan menggunakan api besar ketika mengkukus bakpao karena api besar menghasilkan uap yang banyak dan mengembang terlalu cepat. Hasilnya bakpao akan kempes setelah dikeluarkan dari kukusan.
10. Kukusan harus panas supaya bakpao mengembang dengan bagus. Kukus bakpao 10-12 menit dengan api sedang.
Bahan adonan
450 gr terigu protein rendah
50 gr tepung tangmien
1 sdt baking powder double acting
8 gr ragi instant
80 gr shortening atau mentega putih
80 gr gula pasir
240-250 ml air dingin
1/2 sdt garam
Isian
Babi cincang kecap
4 buah telur rebus atau 8 buah kuning telur asin
2 buah labchiong
Bahan babi cincang kecap
300 gr daging babi cincang
1 buah bawang bombay cincang
3 siung bawang putih cincang
3 buah bawang merah cincang
5 sdm kecap asin
1 sdm saus tiram
1/2 sdt lada
1 sdt kaldu jamur bubuk
1 sdm gula
1 sdm air
1 sdt tepung maizena

Tips and tricks
1. Use cake flour because it is suitable for the soft texture of the baozi and produces smaller pores and the color of the baozi is whiter and brighter because it contains less gluten.
2. To produce whiter baozi, you can add a little tangmien flour in a ratio of 1:9 - 1:10. Tangmien flour is made from wheat starch. Tang Mien flour does not contain gluten.
3. Cold water or cold milk makes the texture of the baozi smoother. Making baozi takes a long time. Cold water makes the baozi dough not "cook" quickly when made.
4. Some recipes use vegetable oil or regular butter to smooth and soften the dough. Replace vegetable oil or regular butter with shortening. This will make the baozi softer and whiter.
5. Add shortening last. Adding shortening at the beginning will make the baozi dough become lumpy.
6. Elastic dough is characterized by the formation of a thin layer that is not easily torn when spread with fingers, shiny dough and smooth surface.
7. Enter the cold water little by little, not all at once so that the gluten is formed.
8. Do not overproof because the baozi will smell sour and deflate after they are removed from the steamer.
9. Do not use high heat when steaming the baozi because high heat produces a lot of steam and the baozi will expands too quickly. As a result, the baozi will deflate after being removed from the steamer.
10. The steamer must be hot so that the baozi expand properly. Steam baozi for about 10-12 minutes on medium heat.

80 grams of shortening

1 teaspoon of cornstarch

Saya tinggal di luarnegri dan mentega putih disini blm pernah lihat.Apakah itu minyak yg dibekukan? Yg dikemas kotak2?Yg dibuat dari minyak sayur?Warnanya memang sama putih.Mohon dijawab ya .Trima kasih
