As promised, my homemade recipe for The Best Banana Muffins Ever: 4-5 bananas Generous splash vanilla Generous sprinkle cinnamon 4 Tbsp. Melted butter 1/2c. Brown sugar (the darker the better) 2 eggs 1/4 c. Unsweetened Applesauce 1/2c. Ground oats 1-2 Tbsp. Whole oats 1/2 tsp. Salt 1 heaping tsp. Baking soda 1 c. Flour Handful of walnuts or sunflower seeds Handful of chocolate chips Mix everything in that order, fill muffin cups and bake at 350F for 25 minutes (should be bouncy on top). Makes 12 muffins, about 215 cal per muffin. Why are they called The Best Banana Muffins Ever? Children from multiple separate families I cook/babysit for have said so.
