Doesnt the old fat burning off from the poppers or chicken give it a bitter taste?

I really want to give this a try. Might have to invest in a charcoal grill.

I'm sure you could do something very similar on a gas grill, if you have one! I love my Weber Kettle, but you could also look into an S&S, which I hear is giving Weber a run for their money.

My wife loves pit bbq, but doesnt like the smoke flavor. I use my gas grill when cooking pit beef ( native Marylander here) for the fam, and it works just fine. Theres zero process changes also. Of course, when cooking for guests i have to show off and cook it on wood coals.

Oh to add, she doesnt like it really rare. So I took a play out of Chap's playbook and put some slices back on the grill and sprayed on some beef au jus.. she loves it medium to medium well. My kids...the rarer the better.
