Bottom round cooked then seared over lump charcoal in the Pit Barrel Cooker, ( pitbarrelcooke... ) then sliced paper thin, piled high on a kaiser roll and topped with slice onion and Tiger Sauce! Recipe below.
1/2 cup mayo
1/2 cup prepared horseradish
1 tablespoon sour cream
1 tablespoon powdered mustard

In college ..my Son worked at the best pit beef restaurant in the greater Baltimore area .. it is in Halethorpe on rte. 1 just south of the city line... the prices are very customer friendly he smokes up the highway so the anticipation builds before you even enter the place

Doing Baltimore justice! Exactly how a real pit beef sandwich should be! This is my favorite sandwich in the world! As a Baltimore resident I eat a lot of them 😂 For anyone coming to Baltimore who wants to try the best pit beef in town, it's served at a shack next to route 70 called Pioneer Pit Beef. Anyone who says Chaps has the best pit beef is obviously an out-of-towner.

Pit Beef is Baltimore's contribution to the BBQ world. For all our faults, nice to be honored. (BTW, depending on the stand, you may also find Turkey, Corned Beef, and ham prepared the same way.)

If you are on I-95 near Baltimore, find your way over to Pulaski Highway and look for Chap's Pit Beef. You will not forget it. I moved away from there about a year ago, and the one thing I miss are the pit beef stands around the Baltimore area. Man, I wish they had them here in Florida!

I've had one of these sandwiches before and they are amazing. You are spot on bro. I agree with you on the lump charcoal for the PBC. I use it from time to time and it works great.

Normally I would not do anything Baltimore. But I had this same sandwich in New Jersey out side of Army base, Ft. Monmouth back in 1970. Served the same exact way. Thanks for this Greg. Another great cook.

Oh yes! More or less, I do this same thing with the eye of the round. So good. I dig fresh puree garlic in my tiger sauce, though. Haven't done one in almost a year. You've planted the seed!

I love using the lump in my PBC, but used to have issues getting it going. Now I use the regular briquettes to start, and pour those on top of the lump and we're good to go. Great recipe.

Excellent cook Greg, I was afraid that the bottom round wouldn't be very tender. I agree, cutting any meat paper thin like that is magical. That tiger sauce definitely looks like it will punch you in the face, I love it.

Hi, This reminds me of the great roast beef sandwiches I'd get late night in Salem Mass. at Bill and Bob's Roast Beef. they have other locations as well. Their competion were other roast beef sandwich stops. Jay Leno used to go to in Boston on his way home from comedy gigs. There are some on Revere Beach MA., and all serve the best roast beef sandwiches we don't have here in CA. I'm in Palm Springs. Bill and Bob's has a 3 way roast beef sandwich that is great.

Hmmm, now I have to experiment with my PBC. Never tried lump in it. Never readjusted the bottom vent. Never removed the rebar during a cook, etc. Looks like I've been missing out on a whole new experience. 😎

I love me some Pit Beef! Horseradish, thinly sliced onion, and a little Sweet Baby Ray's is the way to go. While we are not on Chap's or Boog's volume, we regularly cook up 200-400lbs of Pit Beef as a fun raiser. Got me wanting one now!!

The tiger sauce is a slight varation of a lot of tri tip sauces I've seen. Maybe add a little commercial "tiger hot sauce" to that. Slicing is a great idea with a leaner cut like that! I do brisket and chuck on the PBC, but going to try this out.

Gerg, you need to use a 500ml glass which will fit the whole bottle - because with this kind of beer you have some "sediment" in the bottle which need to go in the glas. So leave a bit in the bottle, shake, then pour it in the glass. Only possible with 500ml glass because it is a 500ml bottle. Greetings from Germany

For me, That sauce could step up with herbs, shallots maybe. Some cilantro, chives or thyme. An arbol chile would give it a nice complex heat addition. Floral.

Greg, this cook was nice! I don't think I've seen you do that cut "beefore". It kinda reminds me of Arby's, and I wondered if you could do a recreation of the classic Arby's sandwich, but upgraded. I think you need a t-shirt with the saying "This is gonna get messy"" :-) Cheers!

I have revtlybeen subscribed to this channel for a while now and I am always impressed by the quality of the meat and the way you prepare the meat. One thing I find really sad though is that while there really is a "meat culture" in the US, you sincerely lack a "bread culture". You seem to only have soft spongy vread, without a decent, crispy crust that contrast to the soft inside. Such a pity. And, by the way, as a German, I might help you pronounce the name of the beer correctly... Y - hen Stephane is how you would pronounce it for Americans... Love your work, You should once visit Germany and taste some of the hundreds of different breads or sausages, it might be worth a trip...

With the Pit Barrel rigged the way you cooked the roast, I wonder if you ever thought about doing something like a beef shawarma. Thanks for sharing, I don't live near Baltimore, but I enjoy this sandwich when I can make it at home.

If you like that Weihenstephaner you should try an Ayinger brew if you can get them in your area. German wheat beers are some of my favorite to pair with food because they don't overpower you with hops like many American beer styles can do.
