A true Man of The Sea Stephen! That's why I've been an avid viewer for years. Your informative views on species, seasons, tides, equipment, legalities and preparing dinner properly is Outstanding. Appreciate it all, yet this one touched a bit closer due to my SW Florida personal favorite lining, working, catching and eating... Red Drum! Humbly the best tasting sea steak of em all when fileted proper.

Long time subscriber here! We watched this video the other day while on vacation in Panacea, Florida. The next day, my husband, on his birthday, caught a 19 1/4" Redfish and he cleaned it and cooked one filet and the collar just like you did here. It was absolutely delicious! We vacuum packed and froze the other filet to enjoy at home in north Georgia. We've learned so much from watching your videos, we even visited Gulf Shores and camped in Fort Morgan a few years ago, because of your videos. We even saw you on the Gulf State Park Pier the day we went! Thanks for all you do and keep the great videos coming! Jenn & Brian H
