Is it bonded using Epoxy resin (petroleum based)?

The joints are flax fibre which is laid up with Sei Whale Epoxy. It is petroleum based, but is a more eco friendly epoxy made up with more sustainable substances compared to other epoxies.

This looks great, I'm going to watch the full-length documentary this weekend for sure! There is a group here in Germany (Ozon Cyclery) that also makes a very similar Design of Bamboo bike, and I bought a kit to build it by myself, should be arriving soon and I'm super excited to build my own bamboo bike!

bamboo? no. how about hydraulic pressed Paper Mache made with epoxy. make a custom frame/ CNC-able

I figure that paper mache would basically be an epoxy bike. Carbon fiber frames are carbon fiber threads, shaped and glued into an epoxy resin.
