Banana Ogura Cake 香蕉相思蛋糕 | Apron
蛋黄 egg yolk 3
全蛋 whole egg 1
植物油 vegetable oil 35ml
香蕉 banana 50g / 1/4cup
柠檬汁 lemon juice 1/2tsp
低筋面粉 cake flour 50g / 1/3cup
盐 salt 1/8tsp
蛋白 egg whites 3
细砂糖 caster sugar 50g / 1/4cup
柠檬汁 lemon juice 1/2tsp
方模 Square mold 15cm x 15cm x 7cm
140摄氏/华氏280 蒸烘烤 50-60分钟
140°C / 280°F Steam Bake 50-60 minutes

I baked this banana ogura cake with success today! Very soft, moist & aromatic. I reduced the sugar to 30g and sweetness is just right! Great recipe! Thanks teacher Apron, I've learned a lot from your unselfish sharing recipes! 谢谢老师! 🥰

I tried doubled the recipe using 5 egg yolks, 5 egg whites and 1 whole egg, reduced sugar to 80g, 140°C 90 minutes. It came out perfect, soft and fluffy. Thanks for the recipe.

Highly recommend this recipe. I made it. Cake is super soft and full of air. The banana flavor linger the whole mouth as if I add the banana essence! *Didn’t have a stick blender home, so I crushed my banana with fork and whisk it to muddy. Cake still rise for no problem. Thank u for such a beautiful recipe.

Say you have a 9x9 inch pan: take a sheet of parchment paper thats (obviously) much larger than that, and measure out a 9x9 square in the middle of the paper, and then fold the paper onto itself so your're left with a 9x9 square in the middle. Then cut the paper like how the paper in this video is cut, and voila. Its a bit tough to describe how to cut it, but it should be four cuts, with only two sides getting cuts. You can also lay your pan on the parchment and scribe the shape of the pan on it, and make it slightly smaller to fit. Hope that helps!

Always use overripe bananas for cakes/breads like this. They may look not exactly appetizing anymore, especially those already dark ones, but they taste better for breads/cakes like this. Already played around with similar breads like in this recipe and also for spanish banana cake. The only thing you have to do is to make sure that the bananas are not yet foul/rotten.

It was almost therapeutic watching this- the way each step was carefully and meticulously executed. I thought it was redundant to mix the egg whites separately if they're all going to end up getting mixed together with the yolks anyway. But I guess for the fluffy springy result at the end you have to follow the steps exactly.

Hi Apron, I’m using the Combination Hot air& Steam Oven at 140’C, after 60 mins, the Cake didn’t cook well, sides are cooked but inside is still raw. Could this be caused by the Oven that’s not hot enough? The sides are fluffy, but the centre is still raw. Thank you for your recipe & guidance

Hi, because the temperature of each oven is different, you may need to bake more time or increase the temperature by about 10 degrees

为啥按照你的配方做,烤出来的蛋糕,皮已经脆了,里面还是糊状的完全没熟呢?追加了2次烘烤,一次五分钟,一次十分钟,里面都软绵绵不成形的。另外,我已经滴了柠檬汁了,还有很重的蛋腥味!我用的是6吋的圆形活动模具,其他跟你的完全一样,难道是因为模具的关系?

你好,有很多原因造成,可能是烤箱溫度過高因为每个烤箱的温度有差異,需要適當的調整一下。不同的模具材質受熱程度有差異這也是原因之一

Hello. This steam bake simmer the tin in the water but other 2 ogura cakes steam bake u have a grill on the bottom separating the cake tin from simmering in the water. So which is more suitable to use?

Hi Apron. Nice to see your recipe looks delicious. For the egg white when you put the sugar, what speed do you use till end? (low, midle or high speed?)

Hi, beat the egg white on high-speed until become bubble form, begin beat on low speed and added sugar separately for 3-4 times until firm peaks form become foamy and frothy, it takes about 5 minutes to complete
