⭐食譜内的鷄蛋是大鷄蛋,每個大約60g。
⭐用來做蛋糕的香蕉一定要選熟透的香蕉,有梅花斑點的更好,做出的蛋糕更加香。
⭐在烘烤之前必须预热烤箱达到设定温度。

⭐如果蛋糕上色比較早,可提早在蛋糕上蓋上一層烤爐紙,繼續用原來的溫度烘烤。

12g(1湯匙)玉米澱粉
5個蛋白
5g(1茶匙)檸檬汁
45g(2.5湯匙)糖
熱水(約75℃/167℉)浴,预热烤爐150℃/302℉,放入蛋糕後轉140℃/284℉(最下層)烤約60分鐘
Hot water (about 75℃/167℉) bath, preheat the oven to 150℃/302℉, put the cake in and turn to 140℃/284℉ (lowest layer) and bake for about 60 minutes

50g(3tbsps) vegetable oil
18g(1tbsp) sugar
5 egg yolks
1 whole egg
80g(1cup+1tbsp) pastry flour
12g(1tbsp) cornstarch
5 egg whites
5g(1tsp) lemon juice
45g(2.5tbsps) sugar
